THE CAKE DESIGN MATERIAL & SUGAR PASTE CAKES

MOLDS
For cakes with sugar dough, mussels are usually missed, but
there is no obligation. It is simply that the molds to be missed facilitate
demolding and allow a very clean rendering. And that silicone molds deform
under the weight of the dough, as soon as we start to make cakes a little high.
THE SPONGE CAKE
A sponge knife is a long knife
(at least 30 cm), with or without a tooth, depending on preference. This
utensil is essential for making cuts of cakes with stages. You can also
use a cake machine.
For
less skilled there are also cut-cake that can cut layers of uniform thickness.
THE
ROLLER
To spread the sugar paste you need a special
roller. If you try with your traditional wooden rolling pin, you run right to
the disaster, it will hang on everything. So you need a roll that does not
catch.
There are all the dimensions, all the lengths,
all the diameters.
Some models even propose to add rings to the
ends. This makes it possible to have a dough of a perfectly homogeneous
thickness. However, we are limited on the size of the spread sugar paste.
